film izle Bake-a-palooza! — The Beautiful Side of Hectic


Pretty sure my new favourite word lately is whatever-palooza. I seem to be saying that a lot lately! After the girls missed 4 days of school last week, I wasn’t really prepared for a PD day on Friday. (Professional development) Since we left the house in a bit of a rush, it’s kind of a disaster around here. I was looking forward to the girls being in school for the rest of last week so I could get a handle of the house cleaning and prepare for Tony’s arrival. Oh well! The girls were off on Friday and knowing them, they’d really be itching to do something “fun” because staying home with dear old Mom just isn’t fun anymore. Was it ever fun?!

Since Debbi’s daughter attends the same school Lauren does, we had all three girls off from school. All 3 of them love to help me cook and bake. And honestly, I don’t let my own kids help much because our kitchen is pretty small. I decided on Thursday to head to our closest bulk barn and pick up all the necessities to bake a bunch of different cookies with the girls. I wasn’t the only one that had that idea either!

We started out with something I like to call “Pretzel Thingies”. Technical word, right?! Basically, waffle pretzles, topped with a Hershey Kiss then a Christmas M&M. (We use smarties here since they’re made in a peanut free facility.) Since Jillian wasn’t getting any formal therapy on Friday, I asked her to help me unwrap the kisses- and not eat any! After unwrapping a bunch, she informed me that this baking sucked and she was finished helping. Thankfully, she came back when we were done making the thingies! We baked these at 250 for 7 or so minutes. I think I left them in a minute too long because they melted a lot more than I wanted.

Next up were some pumpkin chocolate chip cookies and egg nog sugar cookies. I’ve made the pumpkin chocolate chip ones before, but we were trying out the egg nog sugar cookies for the first time.

Pumpkin Chocolate Chip Cookies-
1 cup pumpkin
1 cup sugar
1/2 cup vegetable oil
1 egg
2 cups flour
2 teaspoons baking powder
2 teaspoons cinnamon
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon milk
1 tablespoon vanilla
2 cups chocolate chips (semi-sweet but I use milk)

Preheat oven to 350 degrees

Dissolve baking soda in milk. Mix wet ingredients (including baking soda) together until combined. Sift dry ingredients and gradually add to wet ingredients. Stir in chocolate chips.

Bake for 10 minutes. Cookies will be moist and cakey. Cool completely on wire racks before packaging.

Eggnog Sugar Cookies-
3 cups flour
2 teaspoons baking powder
1/2 teaspoon cinnamon
1 cup cold butter (unsalted, cubed)
1 cup sugar
1 egg
2 teaspoons rum extract

Preheat oven to 350 degrees.

Cream butter and sugar. Add egg and rum flavouring, mix well.

Add flour mixture slowly. Dough will be crumbly. (Mine was actually too crumbly, so I added about a tablespoon of milk)

Divide dough in half and roll out. Cut into shapes. Freeze/refrigerate for 5 minutes to firm before baking.

Bake for 10 minutes or until slightly golden.

As you can see by my picture, our dough wouldn’t even roll out properly, so I just did teaspoons that had been flattened by the palm of my hand. They tasted delicious!
