Today, I spent the day with my friend Debbi and her daughter Jessie, to celebrate Jessie’s 8th birthday. (Funny story on how Debbi and I met… We were taking our girls to school in pajama pants. We made some sort of comment and the rest as they say is history!)
Since money is tight for everyone, I offered to make Jessie a supper of her choice and a cake. True to Cheryl form, I began googling for a fun cake to make for her. Only stipulation? The cake could not be chocolate. Clearly, she doesn’t know what she’s missing. Chocolate is an essential food group after all. One of the first recipes that I found was this one. I figured it looked easy enough. Besides, I really like to bake.
The lesson you need to learn from me? Apparently one should not try a butter cream recipe when it’s hotter than anything outside and totally humid. It makes for a butter cream that won’t thicken properly (no matter how much icing sugar I used) and when you’re trying to decorate said cake, it melts and starts to make the layers slide. Good times. I think I’ll have to make it up to the birthday girl soon! She said she loved it, but I wasn’t pleased on how it turned out. Only visually, it was pretty delicious.
Let me know if you end up making this. I’d like to find out if I just couldn’t do butter cream today. :p
1- box white cake mix
1- box strawberry gelatin powder
1- 15 oz box of frozen strawberries in syrup (pretty sure this is where I went wrong. I used fresh instead of frozen)
4- large eggs
1/2 cup- vegetable oil
1/4 cup- water
Preheat oven to 350. In a large bowl, mix all ingredients with mixer on medium speed, pour into two 9″ round, lightly greased. Bake for 20 minutes or until a toothpick in the middle comes out clean. Let cool for 10 minutes in the pan before fully cooling the cakes on a wire rack.
Strawberry Cream Cheese Butter Cream-
1/4 cup- unsalted butter
1 8 oz- container cream cheese
1- package frozen strawberries in syrup (I used fresh here too…)
1/2 teaspoon- strawberry extract (I left this out)
7- cups icing sugar.
Beat with electric beaters. Mix butter, cream cheese, strawberry extract until fluffy. Gradually add in icing sugar.
I’m still super disappointed in the icing, but it did taste delicious. And I usually follow directions while I’m baking. No idea why I changed the rules this time to let in fresh strawberries!
