A favourite meal in our house is mac and cheese, but not Kraft dinner. Homemade. Everything tastes better homemade. I know I’m always looking for new ideas for supper and whenever anyone is looking for something fast and delicious I usually pass this recipe along. The reason I call in Canadian Mac and Cheese is because Rhea called and asked for the recipe, and that’s what she calls it and it kind of stuck. Unfortunately, I don’t have any pictures, but I will assure you it’s delicious!!!
Ingredients-
1 block of cheddar cheese (I use old, or pre shredded cheddar when I’m running short on time)
1 package of elbow macaroni (I use a 950 gram package)
Milk
flour
butter
Start by bringing a pot of water to a boil. Once boiling, add enough elbow macaroni to feed your family. Since my family LOVES this recipe, I usually make extras so we have leftovers.
As your pasta is boiling, I make a roux for white sauce. I mix 2-3 cups of milk (depending on how much pasta I use) with 2-3 tablespoons of flour and 2-3 tablespoons of butter. I combine it in a small saucepan making sure that there are no lumps in the flour and milk combo. Gently whisking until the mixture comes to a small boil. This is probably the hardest part of this recipe, because you don’t want the mixture to scorch. You can do this step in the microwave as well, just make sure you whisk every 2 minutes or so. Once your white sauce is done, set it aside.
Drain your pasta, then mix with the white sauce. I then place 1/2 of the macaroni/white sauce mixture in a casserole dish and then top with 1/2 of your grated cheese. Top with remaining macaroni and then top with the rest of the cheese. Place in a 350 degree oven for 15-20 minutes or until the cheese on top is melted and slightly crispy.
If you want to be weird like my husband, top with ketchup. If you want to be weird like my dad, top with stewed tomatoes. I like it plain, or with a little bit of salt and pepper on the top. ENJOY!

I made homemade mac n cheese with whole wheat pasta and wheat flour once. It was a little bit gritty.
If you were to lick my screen, you’d probably get boogers in your mouth since Jillian just sneezed on it. Was your screen fuzzy from dust?!
Yum!! I made a version of this last night but the cheese was stirred and not baked in. I am going to try it this way.
Not stirring it into the sauce makes a HUGE difference.

These are the same ingredients that I use except for the cheddar. Ill dice it up by trying the cheddar cheese next time. I love mac n cheese.. I dont know about bacon but Ill try throwing in potatoes too like Jennifer said.

This sounds and looks so delicious. You are killing me here, because I really don’t need to be eating mac and cheese. Maybe since it is Canadian it won’t count though? lol I am sure the kids would love this and I know I am going to have to give it a try.
